MASSAMAN CURRY PASTE
(Namprik geang massaman)

INGREDIENTS (SERVES 1)
SPICES INGREDIENTS:
1/8 teaspoon black peppercorns
1/8 teaspoon cumin seeds, roasted
1/4 teaspoon coriander seeds, roasted
1/4 teaspoon cloves, roasted
1/4 teaspoon cinnamon, roasted
1/4 teaspoon cardamon, roasted
1/8 teaspoon salt
3-5 large, red dried chilies, seeds removed, and soaked in water for at least IO minutes.
1/4 teaspoon mace, roasted

FRESH INGREDIENTS:
1/4 teaspoon ginza, skin removed and chopped
1/2 tablespoon lemongrass, lower 1/3 only crushed and chopped
1/2 tablespoon garlic, peeled and crushed
1/2 teaspoon shallot, peeled and crushed
1/4 teaspoon coriander root, chopped
1/8 shrimp paste (optional)

PREPARATION:
1. Place all of the dried ingredients in a moftu, and grind with the pestle until they are a powder.
2. Add the ginza, lemongrass, and coriander root and pound again until smooth.
3. Add garlic, shallot, shrimp paste and chilies and pound until smooth.
