RED CURRY PASTE

INGREDIENTS (SERVES 1)

Spices Ingredients:
2-5 dried large chilies, such as tabasco, seeds removed soaked in water for at least 1O minutes
1 teaspoon roasted coriander seeds
1/4 teaspoon salt
1/4 teaspoon black peppercorns

Fresh Ingredients:
1/2 tablespoon ginza, skin removed and well chopped
1/2 tablespoon lemongrass, crushed and well chopped
1/2 teaspoon garlic, crushed
1/2 tablespoon shallot, peel and chopped
1/2 tablespoon kaffir lime skin, chopped
1/2 teaspoon ginger if cook with fish
1/4teaspoon shrimp paste

PREPARATION:
1. Grind the coriander seeds black peppercorns in a mortar and grind them into a powder with a pestle.
2. Add ginza, lemongrass, garlic, shallot, kaffir lime skin, ginger, and shrimp paste and pound
using a pestle until the paste is smooth.
